Is there any documentation with a bit of detail on how to program assistants to create semi complex logic.
I'm used to using flags to trigger commands in home automation programming but cant find any info on how to go about this in ve configure

You would need to play with ve config in demo mode.
There is no in depth documentation, just this here.
There is a general flag assistant used to drive other assistants in 3. Advanced assistant.
