I have a standard screen plugged into my HDMI port on cerbo but the bottom part is cut of, how can I change the resolution to get the output to fit full screen

I dont think you will be able to, as its linux based its probably fixed to a non native resolution for a standard hdmi monitor, hence it not displaying correctly.
i.e. designed only to work with a GX touch or a screen of the same native resolution and possibly the same driver chip that is in the GX touch.
