Sorry if this is a silly question, but, can I have multiple 100/20 controllers with the load output connected in parallel?
For example, each controller having its own solar panel and battery and having their load outputs combined to achieve for example 1000w?

This is not a good idea. You will have trouble getting the mppt's to equally share the load current. And the mppt's wont all switch at the same instant, leading to blown fuses on the mppt that switches on first / switching off last.
You are better off using a Battery Protect controlled by the mppt load output to switch the load.
