When I disconnect the ballast the capacity meter returns always to maximum. So every new cycle starts up 100%. He lost the values that already are used from the battery.

This is because you have the setting "Battery Starts Synchronised" turned on which is the default setting. If you turn the shunt off a lot then turn this setting off so that it remembers the SOC and does not reset to 100%.
