Connect a Multiplus 3000 to Cerbo-S GX

From reading the manual for my new MultiPlus 12-Volt 3000VA  120 Amp 120V, I see that there are two RJ-45 ports described as: "2x RJ45 connector for remote panel and/or parallel and 3-phase operation."

Do I connect one of these to the VE.Bus on the Cerbo-S GX? Does this use a standard Ethernet cable?

Yes. The two RJ-45s are simply in parallel so it does not make any difference which one is connected to Cerbo.

The connectors allow multiple VE.Bus devices to be connected to the same bus. For example if you have a parallel or 2/3-phase Multi system.
