Could I daisy chain two Solar charge controllers together and connect them to a ccgx with a VE.Direct cable.

No, that will not work. Only the VE.Direct connected MPPT will be seen.
The chain of VE.CAN connected MPPT's need to continue to the CCGX with VE.CAN.
