I’ve got a nominal voltage of 24 for my off grid solar system but the operational voltage at full capacity will ideally be between 33-34v. Will 32v mega fuses work?

That is very high for a 24V system.
But yes, that should be fine. If you are concerned there is a 48V model of that fuse, but I would use the 32V model myself.
Some 24V lead acid batteries equalize over 32V. 32.4V is typical for Trojans.
