I have a Color Control Firmware V2.03 and would like to program my Bluesolar MPPTs, e. g. for changing the battery bank from AGM to Lithium. When I connect the MPPT to the CCGX, I see no options for changing anything. Is this at all possible?

No it is not possible through the GX. And your firmware is too out of date to do it over the VRM.
Ideally you want to update all the firmware. But to do that you need the right tools.
Use a Bluetooth to be direct dongle with the phone or a ve direct to usb cable then to laptop. Use victron connect to change settings.
