If I want to monitor my starter battery voltage would I even need to run a separate ground wire since the starter battery and the house batteries are both already grounded to the chassis?

Correct. No separate ground wire and the batteries need to share ground, which they do if connected to chassis.

My solar array can trick the smart shunt into thinking the reset of SOC to 100% has been reached. Are there any fixes to this?
