Since in Venus OS you can only select one monitoring and controlling BMS, the aggregator is aggregating/merging the data from all batteries into a single virtual additional battery. You can then select the virtual aggregated battery as monitoring and controlling BMS.

I know the github, doe not explain to me what it exactly is...

The GitHub explains exactly what it does. It collects data from multiple installed batteries and reports the aggregated data as one combined battery on the dbus.

I have two Gobel PC200, would it collect more than std. Victron ve.can?
