Cerbo GX - What are the 2 dummy RJ45s used for and where do I plug them in?

It's documented in the manual that came with it.
You only need them if you have VE CAN or BMS CAN networked devices. If you do not have such networked devices then they are not used, keep them safe in case you need them in the future. If you do have CAN devices as noted above read the manual.
