I have four ET112 meters left over from a project . Is it possible to use them as simple meters just connected to a Venus GX, with no multi? So far I was able to configure the meters with the Gavazzi Software. But have no clue how to set up the Venus w/o inverter and make it reading the meters.

Yes this is possible, they won't show up on the 'remote console' main screen, but you can see them in the device list, and more importantly (I think) you can log them on VRM or (also) using graphana
Yes, we use a Venus Pi with ET340/EM24 meters for client metering as part of our sales process. In this case Venus assumes the single meter is a grid meter and it DOES show in remote console:
I cannot speak for the other 3 and how they would show up.
