Hi I have 2x 100amp Lithium batteries set up in parallel see attached pitcure I've created. Is this the correct installation for the monitoring cables from battery to Shunt?

There is no "midpoint" for batteries connected in parallel.
Otherwise, yes the wiring you've shown is correct.
Fuses protect wiring from the source of power, so the fuse should go as close to the batteries as possible.
