Can I use the load control schedule (lights) on my MPPT 75/15 to turn my Phoenix 12/500 inverter on and off via a wire connected to the remote switch terminal?

@Dunk O hopefully you've already found the answer to this since you originally posted the question, but in case not: Yes. You cannot use the load outputs to directly power your inverter, of course, but you absolutely can use them to trigger the remote on/off of the inverter.
