After a consumption of -40 to -60 Ah, my solar system charges the batteries again until the display shows about -20 Ah. After that, the display jumps abrupt to 0.0 Ah and 100% capacity.
What is wrong? What do I have to do differently?

BMV-700 switches prematurely to 100% charge display
You need to provide some more information about your current charger and BMV settings to understand more about why it's syncronising early.
But most probably the BMV 'charged voltage' setting is too low and your getting periods of low solar power (under the BMV tail current threshold).
If your using a MPPT solar charger then your normally best off setting the BMV 'charged voltage' to the MPPT absorption voltage -0.2 to 0.4v.
