The MPPT regulates the power produced by the panels.
It's normal to put panels with a higher max power than the MPPT can output. This compensates for low input due to clouds, rain etc.
As long as the max input voltage of 75V isn't exceeded and you haven't exceeded Isc, you will be ok.
What does “you haven't exceeded Isc” mean?
