I wanted to check if the IMPAX IMDY1500LBI 1200W INVERTER GENERATOR 230V is Victron-compatible?

By compatibility are you referring to data communication between the two? It is a sine wave so from that endaaccording to specs it should be ok.
You do need to size the right inverter for it though.

Since I have a 3000VA/120A Victron Multiplus Inverter/Charger (https://www.sunshinesolar.co.uk/Item/PMP122300001?gclid=CjwKCAiA1aiMBhAUEiwACw25MQgYkP_OZwdpnPF743rVN7THKW08dKTbUBb3yv9Dm-DsNxoAA5y44hoC4IIQAvD_BwE), I assume that I will need a generator sized around 5 kVa (according to the sizing chart in the link you shared: https://www.victronenergy.com/live/multiplus_faq)
Do I have any choice other than buying a 5 kVa generator? I ask because they are quite expensive for my budget!
The same link you shared above says the following: "If your generator is smaller than the recommended size for your inverter/charger, you will definitely need to adjust the settings on the inverter/charger and reduce the AC input current limit, and/or a DC charge current limit to prevent overloading the generator."
So would an alternative to buying a larger generator be to adjust the setting on my inverter/charger to reduce the AC input current limit? Am I right in understanding that this must be done by plugging in a laptop?

Yes there is always the ideal setup, that is the one recommended. However you can make yours work, it is an inverter type so you may find it easier.
The 5kva is sized as such so you can run full loads and charge up at a decent rate at the same time.
Input current limit down. You have 1200w max continuous, but you dont want to run it there. So try starting with 4A input and ramp it up .5A till it settles. Dynamic current limit checked. 5.2A max for your 1200w generator. (1200w ÷ 230v).
There may be other settings that need attention if it does not accept the generator, but we can revisit that if it happens.
If you have a ve bus Bluetooth dongle or a gx device, it is easier to interact with the input current limit until it is in the sweet spot for the generator, rather than having to fiddle with the laptop and mk3.
