I may have misunderstood your question but I don't think you can "overclock" the inverter to output more.
However I don't think it matters if your MPPT charger is larger than your inverter as long as the MPPT will shutdown in the event the battery is full (Victron MPPT configured correctly will). I have 250/100 MPPT and that's good for 5800 nominal of PV but only a 5kva inverter.
(This is not the case if you're using AC coupled PV, i believe the rule of 1 applies then
AC-coupling and the Factor 1.0 rule [Victron Energy]
but sounds like you're using DC coupled given you mention "MPPT charger")
