What size of Orion smart DC-DC converter would be best for charging an AGM bank of 3 100A batteries. I plan to place the DC-DC converter between my starting batteries (wet cells) and my AGM's.

Broad question with little detail, so a broad answer..
10% (A vs Ah) is a coarse but regularly used design point. So 30A for your 300Ah of battery (12V?).
You may also need to look at other things like your starter batt alternator capacity, especially if you load it up with other stuff too.
