My installer tells me that the MultiPlus II can accept shore power voltages of 90-140VAC and still output 120VAC. Is that correct?

You should consider changing the installer.
No, that’s not true.
In invert mode, you’ll get a stable voltage set in VE.Configure3 (let’s say 120V).
In grid-synchronisation mode, you’ll get exactly the same as what’s in the grid.
