We have a 15Kw inverter ‘Quattro 48/15000/200-100/100 230V VE.Bus’
we have 8 batteries and 20 panels.
My question is:
If we are generating 6835w of power from the panels, the batteries are 70% charged how much AC load should we be ale to use in the property before the inverter trips out?
Yesterday ours tripped twice when the AC load was between 8500-9100w
Take a look at the datasheet again, the rating is in VA.
So yours is rated at 15kVA or 12kW continuous, with additional power derates as temperature increases, down to 7kW at 65°C
I guess you are using DC-coupled PV? Solar power generation helps the batteries, but the inverter should perform the same whether the DC power is coming from the batteries alone or a combination of batteries and PV
Was it tripping due to overload or something else?

This is where AC coupled inverters come in handy. Our PV is both on ACIN and OUT. Never had any kind of issues with what we pull from the inverters.
Define tripped.
Did the system log alarms?
What LEDs were lit?
What was the ambient temperature?
What battery limits were sent at the time (DCL etc)?
You just barely have the right amount of battery for that inverter, assuming on-grid.
If you are off-grid you have too little battery.
