I don’t see where in the VictronConnect app you change the date/timezone. The Cerbo is set correctly and everything else resets correctly.

No, there is no real clock in the MPPT charge controllers so according to the time the PV starts in the morning and when it ends in the afternoon the day/night and noon point is calculated. There is not a setting to change this.
Quoted from the above link.
I read on a different thread that it can be manipulated by switching the pv breaker off and starting it up deliberately at day beginning. Not sure if that will help. I haven’t had one mppt behave differently to others in an install.
Hi,
The MPTTs use a internal algorithm to determine “Solar Midnight” every day. That is, when they reset their yield values.
I had the same Issues on my system, and it turned out, that a camera with IR lighting kept the string voltage at about 70V, while the algorithm is searching for spots bellow 44V iirc.
Thus, check if there are any light sources keeping up the string voltage during night.
If that’s not controllable (Street light or sth), yes, you could powercycle the mppt at the time you wish to become the "new start of day”. [Or disconnect the offending string for a couple of hours during night to give the internal algorithm values to work with]
