New GUI - change colours of the blue bars

I have seen some photos where each bar at the brief dialog on the gui v2 have different colors. How is that? All of the bars in my are blue

If the bars are nearly full or empty (black water high or battery, fuel, fresh water low etc) then they will change colour.

At which level is that? Can it be adjusted?

The colours change automatically, I do not know at what levels but not user settable. You can set alarms in the device setup menu but those probably sound the Cerbo GX audible alarm and generate a notification on the screen. I have edited my original answer to say " nearly full or empty" rather than “alarm state”.
