I think my smart shunt has a learning disability

Everymorning by 8am, it says I’m back at 100% (I"m not, the batteries are still taking in double digits of current while this is going on. At night, it shows the appropriate AH used but at some point it just resets itself to 100% and it makes no sense.

It sounds like you have not adjusted the SmartShunts settings.
Have a look at this post. Shunt / battery monitor jumping to 100%
