Why not ask your “Victron person”? Much of what you are asking is in the product manuals. Much of it is stuff you should have figured out before you decided to purchase thousands of dollars in professional grade electrical equipment. Furthermore there is an abundance of posts on this site about fuses and busbars.
Sorry to be snarky but this forum receives these kind of requests constantly. This is all stuff a diligent DIYer can accomplish but please don’t ask professionals who have put thousands of hours of effort into understanding this stuff and make their living doing it things that are easily accessible in the book that came with your product.
There is plenty of guidance out there on each product page.
Because the system and components are so flexible in design it requires a lot of work to design the system at a wiring level.
For the mppts.
A short Google for each of the other things and their product pages will have manuals at the bottom each manual has a fuse and wiring suggestion depending on cable run length.
But bars are also easy. They are sized on the amps expected to pass over it and number of connections needed to it. And of course where in the system they are being placed. Since it is a vehicle there will probably be a few in different areas link close to the inverter and some possibly in the engine bay.
It will all depend on the approach taken by the installer.
