Need advice on simplest control setup for 1200 watt inverter with smart shunt that allows me to turn on/off the inverter from the helm. Would prefer not to have expense/complication of Cerbo GX and Touchscreen.

Most Victron inverters have remote control inputs of one form or another, so controlling from a remote location is always possible. This can be achieved with 2 wires and a simple switch.(3 wires if you need to switch a multiplus to charger only.)
Simplest set up would be a Phoenix 12/1200VA with a VE. Direct Bluetooth dongle. This will give you the ability to turn it off and on via Blue tooth as well as monitor it with VictronConnect. Victron also makes a simple wired remote switch for the Phoenix.
