Hi There, I have a generator connected to AC2. How/where in the settings I can set the maximum current demand from the generator?

There is a place in VEconfig or VictronConnect to set the current limits separately.
If you have a GX device (Cerbo, etc) you can set the current limit for the active source and the grid and generator settings will be remembered separately (stored in the Quattro I believe).
