I would be grateful if someone can answer my question in the device manual it is specified that the maximum VOC is 100V but it is not written if there is a tolerance my panels have 105V of VOC can I connect them without compromising the integrity of the device
Zero tolerance.
100VOC is the max (VOC values must be compensated for at minimum temperatures - they will be higher)
So you will exceed the value no warranty will be given.

I have 4x HiE-S390UF 2P x 2S. They are 49.3V OC and Vmp 40.8V. I live in the tropics and see the voltage most of the day at 80V the highest they have recorded is 95V. The panels do get clipped they should be able to output 1600W. I have tested 2 in series to see what I could be getting and sit around 600w when hot and if a cloud comes over will go over 800w at 11.5 amps. From 10-3pm I get the full 20amps from that little charger is quite amazing. I hope that helps I was like you worried about voc and being very close but I have not had any problems albeit marginally below.
