Tengo una batería del tipo LifePo4 de 12,8V y 200Ah. Quiero saber si puedo usar un controlador Victron energy, de 75V y 15A para cargar mi batería con dos paneles de 100W cada uno. GRACIAS!!!

Well…

Considering that an 75/15 controller has a PV short circuit current of max 15A, connect the panels in series.
The only choice, because in parallel, you could, for sure, go over the 15A PV short circuit limit of an 75/15 controller.

As for the PV voltage , a 200W panel has usually an open circuit voltage below 37V so even if you put them in series, you’ll not have a problem.
