I have a multiplus with a mppt and a fornius.
Currently I have contracted with the electric company 2 different powers depending on the schedule.
From Monday to Friday from 08:00-23:00 the power is 8 kw.
from 00:00 to 08:00 Monday to Friday 11KW
Saturday and Sunday 11KW
How can I indicate this to the ESS?
You would have to look at DESS.
Or use node red to make some custom schedules and controls

No, it is not correct in the vrm you cannot do it. What it allows you to do is to put the different prices of buying or selling the kw/hour.
It is a matter of indicating the different max grid power brackets.
For example in the weekend you can have a grid of 11KW, but the rest of the days of the week you can only have a maximum of 8kW grid.
