Is this a marketing trick? Is it actually possible to change the color of the rings as displayed in the marketing material from Victron?

You don’t change them, the system does based on usage and attached devices.
I have not seen this. My setup is exactly as the picture. Is there any settings.
All my rings have the same color.
Is it described in the manual how it works with the colors?
Ours change color when the fresh tank get very low (very high for waste). Water & propane tanks connected over RV-C. It would be nice to be able to change that trip level. I’ve only seen one different color so far.

I got it working with a test using virtuell tanksensors in my test environment. Seems like it works with red=0-10% yellow 10-20% blue 20-100%

Can you try black & waste over 90%
