It is possible to display the the AC load on AC OUT2 and AC OUT1 as separate indicators on the User Interface?
No. AC2 does not have its own metering, it is an extension of AC1. You would need to introduce external metering.

Does Victron have an external meter I could use to display the AC OUT 2 on the user interface?
Nick I just did a google search, and see Victron have an external AC monitor.
They have a few, depending on use case. Read their manuals carefully as they explain the roles they can be set to and how that will be displayed.
If you look at the logical diagram of the Multi’s manual, you will see why AC2 is the way it is.

They only differ from eachother by an internal relay for switching out non-critical loads. They don’t have seperate measurements.
