I normally disconnect my batteries through the winter, if I were to leave them connected and charging in "storage Mode" would that improve the health of the batteries?

Probably yes with the correct settings. I would consult the documentation for the batteries and see if you can set the system to do whatever that recomends.

Hi, the batteries are maintenance free lead acid 12V 63 ah

Probably better to charge them at least monthly to avoid deterioration from sulphation.

Storage mode is a very good option if the charger has it.

Disconnecting for extended periods is not good.
